How to do

Process the carrot and the potato in a food processor; transfer the mix to a pot and bring to boil. In another pot, roast 2-3 tablespoons of flour with the cube-cut onions.
Add this mixture to the soup pot and simmer until cooked.
For the dressing, whisk one egg yolk with a glass of water and 2-3 drops of lemon juice; add some soup to this mixture at first to make it tepid.
Slowly add the tepid mixture to the soup.
Boil it for a few more minutes and turn off the stove. Your lovely and healthy dish is ready to serve! Bon appetit!
