How to do
Cube-cut the onion and other vegetables.
Sauté the onions and peppers in butter.
Add the potato and zucchini.
Sauté the vegetables and add vermicelli.
Stir for 1 minute and then add water.
Cook until orzo and the vegetables are softened.
Mix yogurt, egg, a tablespoon of flour, mint and garlic in another bowl.
When orzo is really soft, add the yogurt mixture to the soup gradually and stir.
Boil it for 5 more minutes and soup is ready to serve! EnjoyJ Bon Appetite!
Tips
You may use cracked wheat, rice, star vermicelli or semolina instead of orzo.
Also you may change the amount of vegetables according to your preferences.
I use Crete zucchini for this recipe.
